Special Sauces
Serves 1

Cajun remoulade

Ingredients:

2 cup mayonnaise
1 TBSP Sweet Pickle Relish
1 tsp Cajun Spice
1 tsp Tabasco
1 tsp Ketchup
1 tsp Capers (optional)
Preparation:

1.   Combine all ingredients in mixing bowl, cover tightly and store in refrigerator
Cherry Maple Glaze

Ingredients:

2 cups Real Maple Syrup
3 TBSP Soy Sauce (Light if available)
1/4 cup Chopped Dried Tart Cherries (usually found near dried fruits and raisins in the grocery store
1/2 Fresh Lemon
1/4 to 1/2 cup White Sugar
Preparation:

1.   Combine syrup, soy sauce, and cherries in small sauce pot over medium heat.
2.   Squeeze juice from half lemon in mixture and stir well.
3.   Once mixture is heated, begin to add 1/4 cup of sugar and stir until completely dissolved. Taste glaze for sweetness. Different maple syrups will have different levels of sweetness, so it might be necessary to add additional sugar.
4.   Once glaze is sweet enough, remove from heat and refrigerate. When completely cool, cover and store chilled.
Green Olive Salsa

Ingredients:

1 Cup Green Olives, chopped small
1 tsp Capers
1 Tbsp Diced Shallots
1 Tbsp Minced Garlic
¼ cup Chopped Green Tomatoes
1 tsp Finely Chopped Basil
1Tbsp Pure Olive Oil
To taste Salt
Preparation:

1.   Combine all ingredients in mixing bowl cover tightly, refrigerate (for a slightly smoother texture you can blend items in blender for 10-15 seconds)
Shrimp Salsa

Ingredients:

1 cup Cooked Diced Shrimp
2 each Tomatoes, Diced
1 each Jalepeno, Small Diced
2 TBSP Red Onion, Diced
1 TBSP Cilantro, Chopped Fne
½ tsp Salt
Pinch Black Pepper
Preparation:

1.   Combine all ingredients in bowl and toss lightly. Store covered in refrigeration for 24 hours prior to serving. If a spicier version is desired, you can add an additional jalepeno, or a tsp of your favorite hot sauce.
Shrimp Bloody Mary

Ingredients:

2 cups V8 Vegetable Juice
1 tsp Prepared Horseradish
1/8 tsp Black Pepper
1/8 tsp Celery Salt
2 TBSP Fennel (Bulbs Only, Small Dice)
¼ cup Diced Fresh Tomatoes
To taste Tobasco
1 dozen Cooked Cocktail Shrimp
Preparation:

1.   Combine all ingredients in bowl and toss lightly. Store covered in refrigeration for 24 hours prior to serving. If a spicier version is desired, you can add an additional jalepeno, or a tsp of your favorite hot sauce.
2.   place all ingredients except Tobasco and shrimp in blender, puree until smooth
3.   Gradually add Tobasco until flavor is correct for our taste
4.   Strain Mixture and hold cold
5.   To serve, pour 2 oz Bloody Mary mix in small shot glass, and top with one cocktail shrimp and Vodka, if desired.
