Baked Ziti with Shrimp
Serves 4


1 pound cooked ziti
12 ounces whole milk ricotta
½ cup shredded mozzarella
4 tablespoons olive oil
4 ea. Garlic cloves, minced
1 pound small shrimp, peeled and deveined shrimp
1 ea.16-ounce can diced, peeled tomatoes
1 package frozen spinach, thawed and drained
¼ cup chopped, fresh basil
1 cup fresh grated Parmesan

1.   Heat olive oil in a small sauté pan. Add garlic and sauté. Add the spinach and continue to cook. Add the shrimp and heat until they are almost fully cooked, then add chopped tomatoes along with their juices. Cook until reduced by one-quarter.
2.   Combine the cooked ziti, tomato/spinach/shrimp, and basil. Fold in the ricotta and the mozzarella and half of the Parmesan.
3.   Preheat oven to 375º F. Lightly oil a 13x9 glass baking dish. Add the ziti/shrimp mixture and spread evenly in the pan. Top with remaining Parmesan. Bake until the cheeses melt and the product is bubbly, approximately 30-45 minutes.
